Vetkoek
1 Cup (250ml) Cake Flour
1tsp (5ml) Baking Powder
½ tsp (2.5ml) salt
¾ cup (180ml) Ice cold water
Sunflower oil for frying
Method
- Add all the dry ingredients together. Add ice water to the ingredients until it has formed a soft dough.
- Warm about 3 mm of oil in a heavy duty pot and test the heat by dripping dough into the oil.
- Add spoonfuls of dough to the hot oil and cook it until light brown on the one side. Turn the vetkoek over and cook on the other side.
- Take it out and place on kitchen towel to get rid of excess oil.
Serve with apricot jam, cheese, golden syrup, honey or curried mince.
